Camarones a la "Grandpa" - Easy To Make Shrimp With Dried Guajillo Chile Peppers
We all have that one dish that reminds us of something. It could be a person, place, or memory, but we associate these smells and flavors with feelings. That is the beauty of food, it can make you feel so many things all at the same time. I have so many dishes that remind me of so many different moments of my life, but today I want to share with you a very special one to me: Camarones al Ajillo (Garlic Shrimp). This traditional Mexican seafood dish is one of the most popular ones in Mexico. Every seafood restaurant includes a version of Garlic Shrimp on its menu. But the best version is the one my grandpa used to make. He’d go to the supermarket early morning to get a bag of fresh shrimp, then if I was around, he’d ask me downstairs to help him peel them. He would cook the rice in the meantime and he would tell me all about how his Camarones al Ajillo were the best ones out there, and I would never dare to disagree. My grandpa has retired from the kitchen now, but his recipes still work like the first day he ever took a pan on his hand; and it is my pleasure to pass it along to you.
Garlic Shrimp with Guajillo Pepper

1 lb of peeled fresh shrimp
2 spoons of butter
2 garlic cloves minced
Onion to taste
3 Guajillo peppers sliced
Salt and pepper to taste
Remove the stem and seeds from the chillies and then slice them finely
Chop onion to taste and add the 2 garlic cloves minced
Heat a frying pan to medium heat and melt the butter, then add 2 spoons of olive oil
Add the onion to the pan and cook for a few minutes until the onion softens a little. Pour in the garlic while stirring.
Place de chillies in the frying pan and stir constantly for about 2-3 minutes. Season and add a pinch of salt.
Finally, add the shrimp to the frying pan and stir with the chillies and onions. Cook until the shrimp turns pink.
Serve with white rice and enjoy!
